Easy peasy pancake recipe of International Pancake day

If you need the perfect excuse to eat pancakes for breakfast, lunch and dinner then the 12th of March is just for you! In the Hectic Hangout, we celebrated international pancake day with the squad and they got to make their favourite pancake fillings! We want you at home to be part of the fun and have the perfect east peasy pancake recipe you can make with your family. And the fun part? You can pick your favourite topping and fillings.

All you going to need  to make the batter is

  • 100g plain flour
  • 2 large eggs
  • 300ml milk
  • 1 tbsp sunflower or vegetable oil, plus a little extra for frying

Now for the fun part picking your favourite filling. You can use any of these:

  • Nutella chocolate spread
  • Strawberries
  • Blueberries
  • Lemon
  • Caster sugar
  • Cinnamon
  • Honey
  • Maple Syrup

Let’s get cooking!

  1. Put 100g plain flour, 2 large eggs, 300ml milk, 1 tbsp sunflower or vegetable oil and a pinch of salt into a bowl or large jug, then whisk to a smooth batter.
  2. Set aside for 30 mins to rest if you have time, or start cooking straight away!
  3. Let a parent or guardian help you with this step. Set a medium frying pan or crêpe pan over medium heat and carefully wipe it with some oiled kitchen paper.
  4. When hot, cook your pancakes for 1 min on each side until golden, keeping them warm in a low oven as you go

Serve with your favourite filling. Once cold, you can layer the pancakes between baking parchment, then wrap in cling film and freeze for up to 2 months. That means pancake for any time.
